Quiche, an egg and cheese dish!

My parents make the best quiche and in fact brought a pie to our house right after Dylan was born so we'd have an easy to reheat breakfast the next morning!  It is really easy to make and freezes well!

Ingredients:

1 Frozen Pie Crust

4 Eggs

1/2 Cup Milk

1 Dash of Salt & Pepper

1/2 Cup Chopped Onion

2 Tbsp Chopped Cilantro

4 Strips of Chopped Cooked Bacon

2 Cups Shredded Cheddar Cheese

1 Cup Shredded Mozzarella Cheese

Directions:

Preheat Oven to 350 degrees.

Break eggs into a bowl and mix.  Then add the milk, salt, and pepper to the eggs and blend. Add in all other ingredients and stir until it appears mixed well.  Pour into the frozen pie crust. 

The pie will rise so do not over fill.  This is a chunky fill so just make sure you can see some liquid on top.  I would recommend adding more milk if it isn't running enough or more cheese if it is too runny.

Bake for 60 minutes at 350 degrees...check between 30-45 minutes to make sure it is not burning, you may need to put foil around the crust edge so it doesn't burn.

Try out different varieties of quiche such as: Ham and Cheese, Taco, Philly Cheesesteak, Denver Omelet, etc.

Serve with sour cream, pico de gallo or salsa, and/or fresh avacado!
