Deviled Eggs

Ingredients:

7 Eggs

2 Tbsp Mayonnaise

1 Tsp Yellow Mustard

2 Tsp Dijon Mustard

1 Tbsp Sweet Pickle Relish

1 Dash of Salt & Pepper

Paprika

I use an Egghead to cook my eggs because it is easy and cooks them perfectly every time.  If you boil your eggs on the stove it takes about 10-15 minutes.

Practical Point: You can check if your stove boiled eggs are done by laying the egg horizontally on the counter and then while holding each side and quickly spin it. If the egg moves to a smooth vertical position while spinning it is done!  If it wobbles, boil for a few more minutes or until the egg spins vertically.

Once the eggs are fully hard boiled put them in ice for 5 minutes and then peal off the shells.  Be careful while removing the shell because you want your eggs to be pretty!  Cut the eggs in half and put the yolks in a bowl.

Break up the yolks with a fork and then add all ingredients above. except paprika.  Add additional liquid ingredients to make a moister filling.  Add filling to a pastry bag and fill the halved eggs.

Practical Point: If you do not have a pastry bag, fill a corner of a sandwich bag and cut that corner off.  Squeeze the filling through that corner into the eggs!  Sprinkle paprika to taste!

Finished Product:

For added deliciousness experiment with adding any of the following: jalepenos, cheese, olives, bacon.

The process is beautifully detailed here. Thank you for taking the time to teach the proper method to make the perfect food. Of course I'm obsessed with deviled eggs...
