Cheese Stuffed Chicken

This is a recipe I came up with on my own because I really wanted to use the mozzarella and pico de gallo that I had in the fridge.

First thing you want to do is thaw some chicken breast.  Once thawed flatten it if desired and fillet it open but don't fully cut through one of the longest sides. 

 

Open the chicken breast up like a book, rub with olive oil, then season.  I chose to use salt, pepper, granulated garlic, poultry seasoning, marjoram, Montreal Chicken seasoning, and onion powder.

Bake in the oven at 350 for 25-30 minutes or until chicken is cooked thoroughly.

Add any cheese to one side of the breast, then afix closed with tooth picks. Top with more cheese and bake for a few minutes until the cheese is melted.

Top with pico de gallo and serve!
